Replaces em-dashes and en-dashes with plain hyphens in the console banner, event ID descriptions, README, and ARCHITECTURE.md. Console output matters here: anyone pasting a capture or the help text into a document inherits the character, which renders as mojibake in Latin-1 contexts and breaks search.

Build and tests unchanged: 0 warnings, 0 errors, 65/65 passing.
